Coffee Crunch Cookies
1 1/2 Cup Flour -- all-purpose
1 Tablespoon Baking powder
1/2 Teaspoon Salt
1/2 Cup Sugar
1/4 Cup Brown sugar -- firmly packed
1 Tablespoon Instant coffee
3/4 Cup Butter -- softened
1 Egg
1 1/2 Cups Flaked coconut
Preheat oven to 350 degrees. In large bowl combine all
ingredients except coconut. Blend well with mixer. Stir in
coconut; mix thoroughly.
Drop by rounded teaspoon onto un-greased cookie sheets. Bake at
350 degrees for 10 to 12 minutes. Cool. Makes 36 to 42 cookies.
