Pumpkin Pecan Pie
3 large eggs slightly beaten
3/4 cup sugar
1/2 cup dark corn syrup
1 cup canned or cooked pureed pumpkin
1 cup whipping cream or undiluted evaporated milk
1 teaspoon vanilla
1 cup pecan halves
1 9 inch unbaked pie shell
Preheat oven to 375 degrees. In a large bowl mix together the first six
ingredients. Fold in the pecan halves. Turn the mixture in to the pie
shell and bake for 55 to 60 minutes or until a knife inserted near the
center of the pie comes out clean. Cool.
Makes 1 9 inch pie.
