San Antonio Rice
1 cup rice
1 - # 2 can diced tomatoes
2 -Tbl. bacon drippings
1 - onion, chopped
2 cloves garlic, minced
1 green pepper, chopped
2 cups water
salt and pepper to taste

Fry rice in bacon drippings until brown. Add onion and garlic. Sauté one minute. Add remaining ingredients. Cover and let simmer until rice is fluffy. Do not stir during the steaming process, that will make your rice gummy. Will take about 25-minutes.
