Guacamole Deviled Eggs
Guacamole Deviled Eggs
12 hard boiled eggs
1 ripe avocado
1 small lime
1/4 teaspoon onion powder
1 clove of fresh garlic, pressed
Pinch of salt
Pinch of pepper
1 Tablespoon finely cut cilantro leaves.
1/4 teaspoon paprika (you can use regular or smoked - I prefer regular)
2 slices of crispy cooked bacon, crumbled
Half each of the hard boiled eggs and place yolks into a bowl.
Using a fork, mash yolks until fine and powdery.
Add avocado, juice from small lime, onion powder, garlic salt and pepper. Mix well. and mash until silky smooth.
Add finely cut cilantro and mix well.
Place entire guacamole contents into a ziploc bag and seal shut. Cut tip off of bag and pipe guacamole into each egg.
Top with crumbled bacon and additional cilantro if desired.
Sprinkle with paprika.
Serve immediately or chill and serve.
