Rosemary Roasted Cashews
1-1/4 pounds cashew nuts (20-oz)
2 Tbsp coarsely chopped fresh rosemary leaves or 2 tsp dried rosemary
1/2 tsp cayenne
2 Tbsp brown sugar
1 Tbsp melted butter
Preheat the oven to 375ºF.
Place the nuts on an ungreased baking sheet and bake for 10 minutes. Meanwhile, combine the rosemary, cayenne, brown sugar, and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated.
Can be served warm or cool.
