Banana Fritters
Banana Fritters
4 medium bananas
1/4 cup milk
1 cup all-purpose flour
1 tbsp sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
vegetable oil for frying
In a large bowl, mash the bananas. Mix in milk until smooth. In a separate bowl, combine flour, sugar, baking powder, baking soda and salt. Add the dry ingredients into banana mixture and stir. I just used a wooden spoon.
Heat oil in a deep fryer or heavy bottomed pan to 375 degrees F (190 degrees C). Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, 2 to 8 minutes. You can also use a small ice cream scoop to make it easier to drop the batter in the oil.
Drain on paper towels and dust with confectioners' sugar.
Recipe Notes
This recipe yields about 12 to 15 fritters depending on size.
