Apple Cinnamon Bread
1 1/2 cups flour
1 3/4 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/2 cup butter
1/2 cup sugar
2 eggs
1/2 tsp vanilla
1/2 cup milk
1 large apple, peeled and chopped
sugar/cinnamon mix for the top:
1/3 cup brown sugar (not packed)
1 teaspoon ground cinnamon
Preheat oven to 350F and prepare a 9x5 loaf pan.
Combine brown sugar and cinnamon for topping; set aside.
Cream together white sugar and butter. Add in eggs and mix well. Add in vanilla.
Combine flour and baking powder, salt in a separate bowl. Add to creamed butter/egg mixture.
Add milk to create a smooth batter.
Mixed chopped apples with 1/2 of the brown sugar/cinnamon topping mixture.
Pour half of the batter in the bottom of the loaf pan. Top with half of the apple mixture. Repeat.
Sprinkle remaining brown sugar/cinnamon mixture on top. Use a knife to gently swirl the mixture into the top layer of apples.
Bake at 350F for 30-40 minutes. Test center with a toothpick to determine doneness.
