Mama's Hush Puppies

Mama's Hush Puppies (approx. 12-13 pieces) 3/4 C. yellow cornmeal 1/4 C. all purpose flour 1/2 tsp. salt 1 heaping tsp. baking powder 1 small onion, finely chopped 1/2 C. diced sharp cheddar cheese 1 large egg 1/2 C. milk veg. oil for frying In a bowl, combine the cornmeal, flour, salt and baking powder. Add the onion, cheese, egg and milk and combine well. Allow the batter to rest for 15 minutes. Heat the oil in a deep fryer or skillet to 350 degrees. In batches, drop the batter by tablespoon fulls into the oil and fry for 2-3 minutes, flipping them until golden brown. Remove them to a pan with a cooling rack over it.
