Chicken Dorito Casserole
1 bag nacho cheese Doritos, divided
3 cups cooked chicken, cubed
3 cups shredded Mexican cheese blend, divided
1 cup sour cream
1 (8 oz.) package cream cheese, room temperature
1 (10.5 oz.) can cream of chicken soup
1 (10 oz.) can fire-roasted diced tomatoes
1 (8.75 oz.) can corn, rinsed and drained
1 (4 oz.) can green chiles
Preheat oven to 350º F and lightly grease a 9x13-inch baking dish with non-stick spray.
Crush 3/4 Doritos into small pieces and pour them into greased baking dish.
In a separate bowl, mix together cream cheese and sour cream until combined, then stir in chicken, 1 cup cheese, chicken soup, diced tomatoes, corn and green chiles.
Pour chicken veggie mixture over Doritos, then top with remaining cheese.
Place in oven and bake for 20-25 minutes, or until cheese is melted and bubbly.
Remove from oven and top with remaining Doritos.
Serve hot and enjoy!
