Cheesy Ham and Potato Casserole
1 (32 oz.) bag frozen diced potatoes
1 lb. ham, chopped
2 green onions, chopped
1 (10 3/4 oz.) can cream of potato soup
1 (10 3/4 oz.) can cream of celery soup
1 c. milk
1 (8 oz.) container sour cream
2 c. shredded sharp cheddar cheese, divided
Salt and Pepper to taste
Preheat oven to 350. Grease a 9 x 13 baking dish.
In a large bowl, combine all ingredients, except 1 c. cheese. Mix well to combine. Turn out into prepared dish. Bake uncovered for 1 hour. Sprinkle top with reserved cheese.
Bake 30 additional minutes. Allow to stand for a few minutes before serving. *NOTE* I added a little dried parsley on top for some color.
