Sautéed Spinach with Bacon and Mushrooms
2 slices thick cut bacon, cut up
2 green onions, chopped
1 C. sliced button mushrooms
6 oz. fresh baby spinach
1/4 tsp. black pepper
In a medium size skillet, add the bacon and cook until it begins to crisp up, drain off all but 1 T. of the bacon grease. Add the onions and mushrooms to the bacon and cook for 2 minutes. Add in the spinach and cook till it has wilted (about 5-6 minutes). Season with the black pepper and serve.
