Taco Casserole
Taco Casserole
1 lb of ground beef
1 small onion, chopped
1 hatch greens , chopped and seeded
1 cup of your favorite mild salsa (I used Joe T Pace)
1 can of refried beans (I used Rosarita’s traditional)
1/3 cup of water
1 package of Taco seasoning
1 package (12) of Yellow corn taco shells
2 cups of cheddar cheese shredded (divided)
Preheat the oven to 375 degrees. Grease a medium size baking dish. Cook the beef, onion and green chiles until the beef is brown. Drain grease. Stir in the salsa,water,seasoning mix and beans. Cook on low for about 3 minutes , or until fully mixed. Layer the bottom of your dish with the broken shells. Pour half of the meat mixture over it evenly and sprinkle with cheese. Repeat with the remaining ingredients. Bake for about 20 minutes or until the cheese is melted. Remove and serve!
Topping options : sour cream, guacamole, pico de gallo
