ITALIAN CHOPS WITH PASTA
MAKES 2 SERVINGS.
2 pork chops
1/2 tbs oil
1/2 bell pepper, chopped
1/2 onion, chopped
2 garlic cloves, minced
1/4 cup chicken broth
14.5 oz can diced tomatoes, undrained
3/4 tsp Italian seasoning
Hot cooked penne pasta
Parmesan cheese
Season chops. Brown chops in oil in a skillet. Remove, keep warm. Saute bell pepper and onion in skillet until tender. Add garlic, cook 1 min. Add broth, bring to a boil, cook until liquid is almost evaporated. *Add tomatoes and Italian seasoning. Cook until sauce is slightly thickened. Return chops to skillet, simmer until done. Let rest 5 min. before serving. SERVE with pasta. Sprinkle with cheese
