Cheddar Cornmeal Muffins
Cheddar Cornmeal Muffins
1 c all purpose flour
1/2 c corn meal
1 heaping tsp. baking powder
1/2 tsp. salt
1 c milk
1 egg
1/4 c melted butter
1 1/2 c grated sharp cheddar
Stir together flour, cornmeal, baking powder and salt.
Beat egg with milk and butter.
Add to dry ingredients and stir just to moisten.
Stir in 1 cup of grated cheese. Spoon batter into the greased muffin cups.
Sprinkle the remaining cheese over batter.
Bake at 375 for 15-20 minutes.
These go great with chili, soup or stew.
