Leftover Mashed Potato Peppermint Patties
1 cup leftover mashed potatoes
1 1/2 teaspoon + 1/2 teaspoon peppermint extract
8- 9 cups confectioners sugar
8 ounces dark chocolate melting wafers
Line 2 cookie sheets with wax paper or non-stick foil. Set aside.
In a medium bowl add leftover mashed potatoes and 1 1/2 teaspoon peppermint extract. Blend well.
Add confectioners sugar 1 cup at a time and blend well, until all sugar is added.
Once all mixed together, dough should be slightly sticky but workable.
Scoop out balls, approximately 1 Tablespoon size or smaller, and put on prepared cookie sheet. Keep 1 inch between your balls as you'll flatten them out slightly. However keep them close as this makes quite a few.
Using the bottom of a drinking glass, dip glass into confectioners sugar and then gently press down on each of the balls. Re-dip glass in sugar as needed. Do not flatten all the way. If you recall, a peppermint patty is thicker.
Once all patties are flat, then there are two ways to dry them.
First Way: Let them air dry for 12 - 24 hours. As strange as this sounds, I find this method to be the easiest for dipping in chocolate later.
Second Way: Freeze. Pop the cookie sheets into the freezer for an hour and let them harden.
Once disks have had time to harden, then melt chocolate according to package directions. Add 1/4 teaspoon peppermint extract and mix well.
Working quickly, place a naked peppermint patty into the chocolate. Quickly flip it over to cover entire patty. Remove patty with a fork and place it back on the cookie sheet or a new piece of wax paper. Repeat for remaining patties.
If frozen patties thaw, then pop back into freezer and start on second cookie sheet. I find I can get through about 1/2 a cookie sheet before the frozen ones are too thawed and a sticky mess. Air dried ones do not thaw and hold their shape better when dipping.
Once all patties are dipped, allow them to dry at room temperature.
Remove from wax paper and enjoy!
Notes
If you do not have leftover mashed potatoes you use skinless baked potatoes or boiled potatoes - both of which you would mash up.
