Easy Pepper Steak
2 cups cooked rice
1/4 cup soy sauce
2 Tablespoon white sugar
2 Tablespoon Cornstarch
1/2 teaspoon ground ginger
1 teaspoon garlic, minced or 1 teaspoon garlic paste
3 Tablespoon vegetable oil
1 pound stew meat
1 yellow onion, chopped
1 bell pepper, chopped - any color. I used yellow because it was in my fridge.
In a bowl whisk together soy sauce, sugar, cornstarch and ginger. Add meat and stir to cover and set aside.
In a skillet over medium heat add vegetable oil. Allow oil to heat up for about 2 minutes, then using a slotted spoon, add stew meat to hot pan and cook, browning all sides for about 3 minutes. Do not cook all the way through.
Add onion and bell pepper to steak mixture and continue to cook for 3 - 5 minutes, until onion is translucent and cooked through.
Add marinade to pan and cook for additional 3 minutes until marinade thickens.
Spoon beef mixture and sauce over rice. Serve immediately.
