PUMPKIN PANCAKES WITH GHOSTS
MAKES 4 SERVINGS. HALF RECIPE FOR 2.
In bowl, whisk 1 cup each flour and whole wheat flour, 1 tbs baking powder, 1 tsp pumpkin pie spice, and 1/2 tsp each baking soda and salt. In bowl, whisk 1 cup milk, 1/2 cup pumpkin puree, 3 tbs brown sugar, 2 eggs, and 2 tbs oil, stir into flour mixture until almost smooth. *Grease a skillet, heat. Scoop batter by 1/4 cupfuls into skillet. Cook until bubbly and edges are dry. Turn, cook until golden. Drizzle with syrup. Create ghosts with whipped topping, add chocolate chips eyes. SERVE & ENJOY...
