SOUTH OF THE BORDER CASSEROLE
2 cups cooked rice
1 (4 oz.) can diced green chilis
1 (16 oz.) jar medium picante sauce
2 -3 cups cooked chicken -- in bite sized pieces
8 ounces canned mushrooms -- stems and pieces
6 tablespoons sour cream
Preheat at oven to 350°F. Place chicken in bottom of a greased 1 1/2 quart casserole.
Mix together picante sauce, chilis, and mushrooms. Spread all but 3/4 cup of mixture over chicken.
Add sour cream and rice to remaining picante sauce mixture. Spread over mixture in casserole.
Bake for 30 minutes, or until hot and bubbly.
