Cajun Potatoes
Cajun Potatoes
5 medium potatoes sliced thinly
1 lb of Andouille sausage diced
1/3 Cup of Olive oil
Cajun seasoning to taste
4 garlic cloves diced
1/2 a cup of green onions
1/4 a cup of cheese
Coat sliced potatoes with half the olive oil and seasoning. I used Tony Cachere’s original Cajun seasoning . Let it sit . In a pan place the rest of the olive oil and over medium high heat cook the sausage thoroughly. Once cooked, remove sausage. Add potatoes to the pan and sausage leftover tid bits. Once potatoes are browned and to desired texture add green onions and garlic. Cook for about 5 minutes. Add cheese. Enjoy!
