Mile High Enchilada Pie

Mile High Enchilada Pie
5 corn tortillas, 6 inch size
1 jar salsa, 12 oz
1 can kidney beans, rinsed and drained, 16 oz
1 cup shredded cooked chicken
1 cup shredded pepper jack cheese, 4 oz
Slow cooker directions:
Prepare foil handles (see below) for slow cooker. Put in slow cooker. Put one tortilla in slow cooer. Top with small amount of salsa, beans, chicken and cheese. Continue layering using remaining ingredients, ending with cheese. Cover and cook on low for 6 to 8 hours or on high 3 to 4 hours. Using foil handles, remove from slow cooker. Makes 4 to 6 servings
Foil handles: Tear off three 18 x 2 inch strips of heavy foil or use regular foil folded to double thickness. Crisscross foil strips in spoke design and put in slow cooker to make lifting of tortilla stack easier.
