CHICKEN TACO RICE
2 cups cooked shredded chicken
3 cups chicken broth
8 oz. can tomato sauce
1 pkg. taco seasoning
1 1/2 cups rice (uncooked)
1/2 cup green or red pepper, chopped
1 can corn, drained
Mix all in pan. Bring to a boil. Cover. Reduce heat and simmer 20-30 minutes or
until water is adsorbed (it takes 40-50 minutes for brown rice). Let stand 5
minutes. Fluff.
