Breakfast Sausage Hash
1 medium onion chopped
1/4 cup butter
4 cups peeled, and sliced cold bake potatoes
1 pound sausage browned, and crumbled
2 teaspoons Worcestershire sauce
1 tablespoon chopped parsley
Salt, and pepper to taste
8 beaten eggs
1 cup grated cheddar cheese
In a large pan cook the onions, and butter until transparent.
Add the potatoes turning oftener medium heat until browned.
Add the sausage, Worcestershire sauce, parsley, salt, and pepper.
Heat, pour the eggs over top, and cook until the eggs start to set.
Serve with grated cheese over the top.
