Jack Daniel's Tennessee Whiskey Chicken
1 Tbsp ground ginger
3/4 cup soy sauce
2 Tbsp ketchup
1/4 cup apple juice
1 cup brown sugar
1/2 small onion chopped
1/2 cup grated carrots
1 Tbsp minced garlic
1/2 cup Jack Daniel's
Mix altogether well.
4 Boneless chicken breasts cut into bite size pieces
6 strips of cherry wood bacon
Add cut chicken to marinade and refrigerate for at least an hour. Cook bacon and reserve grease. (cooked bacon is the bonus, you can either add to chicken later or just eat it). Strain chicken and saute in reserved bacon grease. After chicken has cooked add marinade and bring to boil, reduce and simmer for 30 mins.
I bet this would work with marinade would work with pork or beef too.
