Parmesan Garlic Potatoes
Parmesan Garlic Potatoes
1 pound baby potatoes, washed & patted dry, cut into 1/2 inch cubes
2 tablespoons extra virgin olive oil
3 garlic cloves, minced
1 tablespoon course all purpose seasoning
1 teaspoons salt
1 teaspoon pepper
1/4 cup shredded parmesan cheese
Preheat oven to 425
Line a rimmed baking sheet with parchment paper
In a large bowl toss together cubed potatoes, olive oil, garlic and seasonings until well combined
Pour onto prepared pan, making sure potatoes are in a single layer
Place into oven for 20-25 minutes, or until potatoes are soft, tossing once half way through
Remove and sprinkle with cheese
Place back into oven and continue cooking for another 5-10 minutes or until cheese is melted
Remove and serve immediately
