Simply Roasted Carrots
Serves 4
1 lb carrots (peeled & trimmed or you can use baby carrots - I left green ends on just for fun)
2 tbsp extra virgin olive oil
2 tsp salt
2 tsp pepper
1 tsp garlic powder
Fresh chopped parsley for garnish (optional)
Preheat oven to 400
Line a rimmed baking sheet with foil
Place trimmed carrots onto prepared pan and drizzle with olive oil, tossing to coat carrots evenly
Sprinkle salt, pepper and garlic powder again tossing to coat carrots
Place into oven and roast for 15-20 minutes, or until carrots are tender, tossing once
Remove and place on platter topping with fresh parsley (if using)
