Peachy Delight

Peachy Delight

1 (2-layer) package yellow cake mix
3/4 cup melted butter
1 pound peaches, sliced, sweetened
2 cups sour cream
1/4 cup sugar
3 egg yolks
Cinnamon to taste

Combine cake mix and butter in bowl; mix well. Spread in bottom of
lightly greased 9 x 12-inch cake pan. Layer peaches
over top. Blend sour cream, sugar, and egg yolks in bowl. Spoon over
peaches. Sprinkle with cinnamon. Bake at 350
degrees for 30-35 minutes or until set. Yield: 12 servings.

Upside-Down Pizza Casserole

Upside-Down Pizza Casserole


1-1/2 pounds lean ground beef
1 15-ounce can Italian-style tomato sauce
1-1/2 cups shredded mozzarella cheese (6 ounces)
1 10-ounce package refrigerated biscuits (10 biscuits)

Preheat oven to 400 degrees F. In a large skillet cook beef until no longer
pink, stirring frequently. Drain off fat. Stir in tomato sauce; heat through.
Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mixture with
cheese.

Flatten each biscuit with your hands; arrange the biscuits on top of the
cheese. Bake in the preheated oven about 15 minutes or until biscuits are
golden. Makes 5 servings.

Easy crockpot suffed bell peppers

6 green peppers washed, topped and seeded
1 Tbs. shortening (i.e. Crisco)
1 1/2 - 2 lb. ground beef
1 C. cooked rice
1 sm. onion, chopped1 tsp. salt
1/8 tsp. black pepper
dash of basil
1/2 C. ketchup
1 8-oz. can tomato sauce w/ or w/o seasoning
Directions

Heat shortening in skillet and brown beef. Combine meat and next 6 ingredients. Stuff bell peppers. Arrange bell peppers in large crock pot. Can be stacked. Pour tomato sauce over peppers. Cooker on low for 6-7 hours or on high for 3-4 hours.

Hillbilly Fudge

2 cups granulated sugar
1/2 cup milk
4 tablespoons cocoa
1/2 cup margarine
1/2 cup peanut butter
3 cups oatmeal

Boil sugar milk, cocoa and margarine for 1 minute, then add peanut
butter and oatmeal. Put into a 9-inch square pan. Bake at 325 degrees
F for about 20 to 25 minutes.

1/2 cup butter
5 oz jar sharp cheese spread
1 1/2 tsp mayonaise
1/4 tsp garlic pdr
1/2 tsp seasoning salt
6.5 oz can crabmeat,drained well
6-8 English muffins split

Let butter and cheese soften
Mix together mayo,garlic pdr and seasoned salt
Add crabmeat
Spread on English muffin halves
Cut into quarters
Freeze on a cookie sheet then store in plastic bags
When ready to serve bake at 350 for 15-20 min or until lightly browned
Serve hot

Pineapple Pie

Pineapple Pie

1 can sweetened condensed milk
1/2 cup lemon juice
1 can (20 ounces) crushed pineapple, drained
1/2 cup chopped pecans
12 ounces whipped topping
2 graham cracker crust

Mix milk, lemon juice, and whipped topping. Add pecans and pineapple.
Mix well. Pour into graham cracker crusts. Will make 2 pies. Can be
frozen.

Baked Potato Casserole

5 large potatoes, cooked and diced
6 slices bacon, cooked and crumbled
1 lb shredded cheddar cheese
1 pint sour cream
2 bunches chopped green onions (saut�ed in bacon grease)
salt and pepper to taste

Mix all ingredients. Pour into casserole and bake 30 minutes at 325.

Tutti Fruiti Bundt Cake

3 beaten eggs, beat eggs by hand
3 c. flour
3 c. sugar
1 tsp. Salt
1 tsp. Soda
1 tsp. Cinnamon
1 1/2 tsp. Vanilla
1 1/3 c. Crisco oil

Fold in all above by hand. Mix in order exactly as above reads. Then
add in order: 1 c. undrained crushed pineapple 1 (4 oz.) jar chopped
drained maraschino cherries 1/2 c. nuts Bake at 350 degrees for 1
hour 15 minutes or until done in a greased and floured bundt pan

Flying Popcorn Balls

Flying Popcorn Balls

3 quarts popped popcorn -- unsalted
1 cup spanish peanuts -- salted
6 ounces semisweet chocolate chips
1 pound marshmallows
1/4 cup butter

Combine popcorn, peanuts, and choco chips in large bowl or roaster. In large saucepan, cook marshmallows and butter over low heat until melted. Pour over popcorn, tossing gently to mix. Cool 5 minutes. Butter hands lightly. Form into 2 1/2" balls.

Pretzel Squares

1 cup crushed pretzels
1/4 cup plus 1/3 cup butter, melted
1 (14 ounce) can sweetened condensed milk
1/4 cup sugar
1 cup(6 ounces) semi sweet choc, chips, melted
Preheat oven to 400° F. Line a 7"x11" baking pan with foil, letting the ends extend beyond the edges on two opposite sides. Spray the foil with Pam. In a small bowl, combine pretzels & 1/4 cup melted butter; mix well and press into bottom of pan. Bake 10 minutes; set aside. In a small saucepan, combine sweetened condensed milk, sugar, and remaining 1/3 cup butter. Bring to a boil over medium high heat stirring constantly. Reduce heat to medium low and cook for 10 minutes or until golden, stirring constantly.
Pour milk mixture over crust and chill for half hour or until firm. Melt chocolate chips & smooth over the top; then chill at least 2 hours or until firm. Lift foil from pan; then remove the foil. Place on flat cutting surface. Then cut into small squares.
Note: You can also press miniature pretzels into the chocolate while it's still soft so that each square will have a pretzel in it.
