Banana Pudding Cookies
Banana Pudding Cookies 2 1/2 cups flour 1 tsp baking soda 1/2 tsp salt 1 cup butter, room temperature 3/4 cup brown sugar 3/4 cup white sugar 2 eggs 2 tsp vanilla 1 box (3.4 oz) instant banana pudding mix 1 cup quick oats 1/2 cup white chocolate chips 20 vanlla wafers, crumbled (not crushed) Sift together flour, baking soda and salt. Set aside. Cream butter and sugars together. Add in pudding mix, then eggs and vanilla. Beat after each addition. Add in flour mixture and mix well. Add in oats, white chocolate chips and vanilla wafer crumbles. Combine well. Using a scoop to get uniform size, place on an ungreased cookie sheet a couple of inches apart. Bake at 350F for 10-15 minutes until done. Loosen slightly with a spatula, allow to cool 5 minutes, then move to a rack.
