Easy Crock Pot Red Beans & Rice
2, 10 oz. cans dark red kidney beans, drained and rinsed
1 medium onion, chopped
2 ribs celery, chopped
1 C. diced green bell pepper
2 cloves garlic, minced
1 lb. smoked sausage, sliced
14 oz. can chicken broth
1 T. cajun seasoning (I used Slap Ya' Mama)
1 tsp. smoked paparkia
2 bay leaves
1 C. long grain white rice, uncooked
salt to taste
Place everything minus the rice and salt in your crock pot. Stir to combine, cover and cook on high for 2 hours. Stir in the rice, cover and continue to cook for 1 more hour. Season with salt to taste before serving.
