Sweet Potato Pudding
Sweet Potato Pudding
2 lbs sweet potatoes
3 1/2 cups milk, divided
1 3/4 cups sugar
Peel the sweet potatoes. Rinse them, then cut them into slices.
Place the sweet potato slices in a large pan. Cover them with 2 1/2 cups (625 ml) of the milk. Cook them over a low heat until the sweet potatoes are soft enough to be mashed.
Remove the sweet potatoes from the heat. Mash them thoroughly, until they are completely smooth. Add the sugar & the remaining 1 cup (250 ml) of milk. Carefully stir to blend.
Return the pan to the heat & simmer the mixture until it starts to thicken (it should reach the consistency of a creamy soup).
Serves 10
