The Ultimate Peanut Butter Cookies
Serves 48
1 cup butter, room temperature
1 cup brown sugar
1 cup white sugar
1 cup creamy peanut butter (or crunchy if you like)
2 eggs
1 tbsp vanilla extract
1 tsp salt
2 3/4 cups all-purpose flour
2 1/2 tsp baking soda
2 1/2 tsp cornstarch
1/2 cup chocolate chips
1/2 cup peanut butter chips
1 1/2 cups M&M's (divided)
In the bowl of a stand mixer (or large mixing bowl) cream together butter, both sugars & peanut butter for 4-5 minutes
Add in 1 egg at a time, mixing until just mixed in
Add in vanilla and salt, mixing until just combined
In a bowl whisk together flour, baking soda and cornstarch
Add flour mixture into butter mixture in 2 batches, mixing until just combined
Stir in chocolate chips, peanut butter chips and 3/4 cup M&M's until evenly distributed
Cover bowl and chill in the refrigerator for at least 1 hour up to 24 hours
To bake
Preheat oven to 350
Line baking sheets with parchment paper
Using a small cookie scoop place mounds on cookie sheets
Bake for 12-13 minutes, or until edges are browned
Remove from oven and place 3-4 additional candies on each cookie (to make them pretty)
Let cool on baking sheet for 5 minutes and then move to a cooling rack
Once completely cooled store in an airtight container
