Texan Tacos
Texan Tacos
1 1/2 lbs ground beef
1 medium sweet pepper chopped
1 small onion chopped
1 14.5 oz can diced tomatoes, drained
1 1/3 c. frozen corn thawed
1 8 oz can tomato sauce
2 Tbsp chili powder
1/2 tsp salt
1 8.8 oz ready to serve brown rice
20 taco shells
Optional toppings
Tomatoes
Shredded Lettuce
Sour Cream
In a large skillet cook ground beef, red peppers, and onion over medium heat until beef is cooked through and no longer pink. Drain grease.
Mix in tomatoes, corn, tomato sauce, chili powder and salt. Bring to a boil and then add rice. Heat mixture through. Serve in taco shells and top as desired.
