CHEESY CHICKEN BROCCOLI & RICE SKILLET
2 tbsp. vegetable oil
1 lb. boneless, skinless chicken breasts, cut into bite-sized pieces
Salt and pepper, to taste
1 small onion, chopped
2-3 garlic cloves, minced
1 cup long grain rice
2 1/2 cup chicken broth
2 cups broccoli florets
1 cup Cheddar cheese, shredded
Heat the oil in a large skillet over medium-high heat.
Add the chicken and season to taste with salt and pepper. Cook, stirring occasionally, until the chicken is cooked through. Add the onion and garlic. Cook an additional 3-4 minutes, stirring occasionally, or until the onion is softened.
Add the rice and chicken broth to the pan. Stir to combine. Bring to a boil, cover, then lower temperature to medium-low to maintain a simmer. Cook for 12 minutes.
Add the broccoli to the pan and stir. Cover and continue to cook an additional 7-8 minutes or until the broccoli is tender-crisp and the rice is soft.
Sprinkle with cheese. Serve immediately.
