Best Potato Salad

Best Potato Salad 6 Russet Potatoes, peeled and diced small 1/3 cup Green Pepper, diced small 1/4 Cup Bacon, diced 2 Hard Boiled Eggs, diced 2 Tbsp Dijon Mustard 1 Cup Mayonnaise 1 Tbsp Spicy Brown Mustard 1/2 Tsp Paprika 1 Tsp Salt 1/2 Tsp Pepper 1/2 Tsp Garlic Powder 1/2 Tsp Onion Powder Place potatoes in a large pot, fill with enough water just to cover all of the potatoes. Cook covered on medium high heat for about 15 minutes. Remove lid when the water starts to boil. After 10 minutes check them and make sure they are fork tender. Strain the potatoes, set them aside and let cool about 10 minutes. Add all other ingredients to a large bowl, pour in the potatoes and mix very well, combining all the ingredients. Cover with clear wrap and chill in fridge until ready to serve. Tip: Celery also works well if you don't have a green pepper.
