Italian Sausage and Veggies
Italian Sausage and Veggies
(approx. 4-5 servings)
3 mild Italian sausage links, sliced 1" thick
3 med. potatoes, washed and cut into bite size cubes
1 small onion, chopped
1/2 red bell pepper, chopped
6 asparagus spears, cut into 1 1/2" pieces
2-3 T. olive oil
1/4 tsp. garlic powder
salt and pepper to taste
In a iron skillet, or heavy bottom skillet, heat 2 T. olive oil over med. high heat. Add in the potatoes and stir around in the oil. Add in the sausage and reduce the heat to medium. As this begins to cook up, add more oil if necessary (I used an iron skillet and needed a bit more). After 10 minutes, add in the asparagus, pepper and onion. Stir to combine and continue to cook till the potatoes are tender and sausage is cooked through. Add the garlic powder, stir and then season with the salt and pepper to your liking.
