Simple Chile Rellenos Dish
8-10 whole roasted, peeled and seeded green chiles
2 cups Montery Jack Cheese, grated
5 large eggs
2 cups milk
1/2 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp onion powder
salt and pepper to taste
Mix together eggs, milk and seasonings. Cut chiles in half lengthwise. Layer half the chiles on the bottom of a 9x13 baking dish. Top the chiles with half the cheese. Repeat layer of chiles then cheese. Pour egg mixture over the top. Place dish on baking pan with an edge or on a larger baking pan. Add about 1/2' of water to the larger pan. Bake at 325 degrees for 45-60 minutes or until completely set. Garnish with a little more shredded cheese before serving.
