Cheesy Chicken and Broccoli Casserole
2 pounds boneless, skinless chicken breasts
salt and pepper
1 tablespoon butter
1 tablespoon oil
1/2 medium sweet or yellow onion, chopped
1 (10.5-ounce) can condensed cream of chicken soup undiluted
1 (10.5-ounce) can condensed broccoli cheddar soup undiluted
1/2 cup freshly grated or shedded Parmesan cheese
5 white American cheese slices, cut into thin strips
1 (12-ounce) bag frozen broccoli, thawed
1 (6-ounce) box cornmeal stuffing mix I use Stovetop
Preheat oven to 375 degrees and lightly grease a 9x13-inch baking dish.
Cut chicken into bite-sized pieces and season with salt and pepper.
Heat oil and butter over medium high heat in a large pan. Add chicken and onion and cook just until chicken is lightly browned and onion is soft. It will finish cooking in the oven.
Transfer chicken and onion to a large bowl. Add remaining ingredients and stir.
Note: You'll want to season the broccoli with some salt and pepper before adding it.
Transfer mixture to prepared baking dish. Bake for 30 minutes.
