Southern Collard Greens
Southern Collard Greens
1 Pound of fresh Collard Greens, washed well and chopped.
1 Pound Ham, cubed
1 Medium Onion, chopped
2 Cloves of Garlic, minced
1 teaspoon Black Pepper
1 Tablespoon Salt
1 Tablespoon Crushed Red Peppers
2 Tablespoon Butter
Water, if needed
Fry ham in butter in large heavy-bottomed pot over medium heat until just slightly browned. Add onion and collards, and sauté until wilted. Add minced garlic, black pepper, salt and red pepper. Reduce heat to low and simmer for 3 ½ - 4 hours. If greens do not produce enough juice, add 1/2 cup water or more if needed. Season with additional salt, hot sauce and pepper to taste.
