Skillet Fiesta Dinner
1 lb ground turkey or 1 lb beef
1⁄2 cup chopped onion
1 (1 1/4 ounce) envelope taco seasoning
1 1⁄2 cups water
1 (14 1/2 ounce) can stewed tomatoes, undrained
1 cup frozen corn
1 1⁄2 cups uncooked instant rice
2 cups shredded cheddar cheese
In a skillet, cook turkey or beef and onion and drain fat. Stir in taco seasoning, water, tomatoes and corn and bring to a boil. Add rice. Reduce heat, cover and simmer for 5 minutes or until rice is tender and liquid is absorbed. Sprinkle with cheese, cover and let stand until the cheese is melted.
