Fiesta Lime Shrimp Salad
Fiesta Lime Shrimp Salad
Dressing
1 lime juiced
1 T honey
1/4 tsp sriracha (more if desired)
1/4 cup olive oil
1 Tbs chopped cilantro
1/2 Tbs red onion
Salad
2 sweet mini peppers, sliced
1/2 cup chopped red onion
1/2 cup pomegranate arils
1/2 cup persimmon, chopped
1/2 cup fresh pineapple, chopped
1/3 cup corn kernels
1/4 cup chopped cilantro
1/2 avocado, sliced and diced
4 cups baby spinach
2 cups baby kale
1 recipe of Spicy Honey Lime Shrimp
Put all dressing ingredients in a blender and blend until smooth, taste and adjust flavor according to preference.
Prepare shrimp according to directions in the recipe.
Wash and chop all salad ingredients
Assemble and enjoy
SPICY HONEY LIME SHRIMP KABOBS
Marinade
2 limes juiced
1 tsp sriracha
3 Tbs red onion
2 Tbs chopped cilantro
2 Tbs honey
2 Tbs olive oil
a pinch of salt and pepper
Shrimp
1 lb jumbo shrimp
Skewers
Put all marinade ingredients in a blender or food processor, and blend until mostly smooth.
Shell, devein, and clean shrimp
Toss shrimp in marinade, and put in fridge for 5-10 minutes
Heat up a George Foreman type indoor grill or BBQ grill
Skewer shrimp
Cook on grill until just turned pink (about 3-4 minutes), flip if cooking on traditional BBQ
