Bean Tostadas
Corn tortillas
Oil, for frying
1 can (28-30 oz.) refried beans
Choose your favorite toppings:
Shredded lettuce
Shredded Cheddar Cheese
Chopped tomatoes
Chopped red onion
Black olives
Sour Cream
Guacamole
Limes wedges
Taco sauce or salsa
In a medium skillet, heat about ½-inch of oil over medium-high heat. When the oil is hot, add a tortilla – cook one at a time – and fry until crisp and golden, flipping once. Remove to a paper towel lined plate to drain.
Meanwhile, heat the beans in a medium saucepan over medium-low heat until heated through, stirring occasionally until hot.
To serve – spoon beans onto the tortilla and spread around. Top with your choice of toppings.
