Zucchini Pineapple Bread
3 Eggs 1 Cup Oil
2 Cups Sugar 3 Cups Flour.
3 tsp. vanilla 1 tsp. Baking Powder.
1 tsp. Baking Soda 1 tsp Salt
3 tsp. cinnamon 1 Cup Walnuts chopped (optional)
1 8 oz. can crushed pineapple “drained” 2 Cups Grated Zucchini
Mix all the dry ingredients, cream the oil, sugar, vanilla and eggs. Add the creamed mixture to the dry ingredients, add the pineapple & nuts, then and add to two prepared (greased and floured) bread pans. Bake at 350* for approximately 55 minutes. If you use a convection oven you may need to alter the baking time by a little less.
