Apple Cinnamon Streusel Muffins
Streusel:
1/4C light brown sugar
1/4C all purpose flour
1/2 tsp cinnamon
2 Tbsp unsalted butter, softened
Muffin:
1/4 cup butter, softened
1/2 cup light brown sugar
1/4 cup granulated sugar
1 egg
1/2 teaspoon vanilla extract
3/4 cup plain yogurt
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon baking powder
1 1/2 cup all purpose flour
1 1/2 cup apples; peeled, cored and chopped
Preheat oven to 350°F. Spray large muffin pan with non-stick spray or line with paper liners. In a small bowl, combine topping ingredients. Work together with a fork until combined and crumbly. Set aside. In large bowl, cream together butter and sugars. Mix in egg, vanilla and yogurt until nearly combined. Add remaining dry ingredients, except apples, mixing until just smooth. Stir in apple by hand. Divide batter evenly into tin, filling roughly 3/4 full. Sprinkle with topping. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
