Cheesy potato and smoked sausage casserole
1 lb smoked sausage
3 lbs potatoes peeled, cubed and cooked
4 tbsp butter
4 tbsp flour
2 c milk
1/2 lb velvetta cubed
1 c shredded cheddar cheese
Salt & pepper to taste
Cut sausage in half moon slices and cook. Set aside
In a medium saucepan melt butter and add flour stir for 2 minutes. Add milk and stir until it starts to thicken add velvetta cook until cheese is melted. Stirring constantly.
In a 2 qt casserole dish put cooked potatoes and sausage
and mix together pour cheese over potatoes and sausage. Sprinkle shredded cheese on top bake at 350 for 30 minutes or until cheese is bubbly. I usually add extra cheese.
