Pork Ribs

Pork Ribs

1 onion, quartered
1/2 tsp each salt and pepper
1 whole rack pork spareribs

BARBECUE SAUCE
3 cloves garlic, smashed
1/4 cup water
1 tsp grated lemon peel
1/2 tsp ginger
2 tbs lemon juice
3 tbs brown sugar
1 cup ketchup

PLACE spareribs, onion, salt and pepper in a pot. Add water to cover. Bring to a boil, reduce heat, cover simmer 1 hour or until meat on ribs is tender. Mix Barbecue sauce ingredients in a saucepan. Bring to a boil, reduce heat, partially cover simmer 20 min. Let cool. Remove spareribs from pot, brush with sauce. TO GRILL: Heat barbecue. TO BROIL: Line broiler pan with foil. Place ribs on broiler pan rack. Grill or broil ribs 14 min. basting a few times with sauce, turning ribs over occasionally until lightly charred. TO SERVE---Cut in 1 rib portions.
