Crumb-Coated Cube Steaks
1 egg
1/2 cup milk
23 saltines, crushed
2/3 cup flour
3/4 tsp salt
1/4 tsp baking powder
1/4 tsp cayenne pepper
1/4 tsp pepper
4 beef cubes steaks (4 oz. each)
3 tbsp canola oil
Gravy:
2 tbsp flour
1 1/3 cups milk
1/4 tsp salt
1/4 tsp pepper
In a shallow bowl, whisk the egg and milk. In another shallow bowl, combine the
cracker crumbs, flour, salt, baking powder, cayenne, and pepper. Dip the steak
in the egg mixture, then the cracker crumb mixture. In a large skillet, cook
the steak in the oil over medium heat for 3-4 minutes on each side or until no
longer pink. Remove and keep warm. In the same skillet, stir in the flour
until blended, stirring to loosen the browned bits from the pan. Gradually add
the milk. Bring to a boil. Cook and stir for 2 minutes or until thickened.
Sprinkle with salt and pepper
