BLT Stuffed Tomatoes---with Cheese
1/2 pound sliced bacon
1/8 tsp Old Bay seasoning
3 tbs mayonnaise
1/4 of 1 head lettuce
8 tomatoes
SLICE tops off tomatoes, scoop out flesh and seeds from centers, reserving 1/2 cup flesh. Rinse out tomato shells, let dry upside down on paper toweling. Chop reserved tomato flesh. In a skillet, cook bacon until crisp, 5 min. Transfer to paper toweling to drain. THINLY slice lettuce wedge into fine shreds. Transfer lettuce to bowl. Stir in reserved chopped tomato flesh. Add cheese, mayonnaise, vinegar, Old Bay and hot sauce, stir until blended. Crumble bacon into bite size pieces. Stir bacon into lettuce mixture. Place tomatoes upright on platter. Spoon filling into tomatoes, mounding slightly. Replace tomato tops. SERVE stuffed tomatoes immediately
