Slow Cooker Italian Pot Roast
1 (3-4 lb) Beef chuck roast
3 Tbsp diced onion
3 Tbsp minced fresh garlic
1 (1¼ ounce) package Au Jus mix
1 (1 ounce) package dried Italian salad dressing mix
2 tsp black pepper
1 pinch cayenne (optional)
1½ cups tomato juice
Place roast in the bottom of your slow cooker/crock pot.
Whisk the remaining ingredients together in a separate bowl and pour over the roast.
Cook on LOW for 8-10 hours or on HIGH for about 4-1/2 hours.
Serve over risotto or mashed potatoes
