Pork Chops and Fried Apples
3 large apples, washed and sliced
3 T. brown sugar
1/2 tsp. cinnamon
1/4 tsp. ground allspice
3 T. butter
4 bone-in pork chops
my all purpose seasoning (recipe below directions)
Place the sliced apples in a bowl and toss them with the brown sugar, cinnamon and allspice. Melt 2 T. of the butter in a large skillet over med. high heat. Add the apples to the pan and cook, stirring occasionally for 8-10 minutes or until softened. Remove the apples from the skillet to a plate, set aside. Season both sides of the pork chops with a sprinkling of the all purpose seasoning. Melt the remaining 1 T. of butter in the same skillet the apples fried in (do not wipe out the skillet after removing the apples, you want the flavor from the pan drippings). Lay the seasoned pork chops in the pan, frying for 4-5 minutes then turning the chops over. Once you turn the chops add the apples back to the skillet over the top of the pork chops to allow them to warm back through as the other side of the pork chops cook. I served ours with a side of fresh green beans.
All Purpose Seasoning
2 T. smoked paprika
1 T. brown sugar
1 T. salt
1 T. Adobo seasoning
1 tsp. black pepper
Combine all ingredients and store in an airtight container.
