Sweet Glazed Lemon Cookies
1/2 Cup 1 stick Unsalted Butter
2 Tablespoons Cream Cheese softened
1/2 Cup + 1 Tablespoon Brown sugar
1/4 Cup Sugar
1-2 Tablespoons Lemon zest to taste - reserve juice for glaze!
1 egg
2 Cups Flour
1 and 1/2 Teaspoon Corn Starch
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Cup White Chocolate chips
GLAZE
1 1/4 cup powdered sugar
Juice of 1 Lemon
Preheat an oven to 350 degrees
Line baking sheets with silpats, our absolute favorite thing ever
In a standing mixer, add the butter and cream cheese and beat until smooth.
Add the brown sugar and white sugar and beat again.
Add the lemon zest and egg, and mix at medium speed until incorporated.
In a separate bowl, whisk together the flour, corn starch, baking soda and salt.
Add the dry into the wet along with chocolate chips and mix on low speed, then turn it up to medium speed until the dough comes together.
Scoop using a cookie scoop (finally, one that has a warranty as those things break too much!) or 1/4 cup measuring cup onto the pan.
Bake for 10 minutes or until set.
Remove from the oven and cool for 2 minutes, then brush with the glaze.
Lemon Glaze
In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
