Cranberry orange baked pancake
2 cups pancake mix
1.5 cups buttermilk
1 tsp of vanilla
the zest of 1 large orange
1 cup of cranberries
Preheat the oven to 350. Grease an 8×8 casserole dish or an 8 inch cast iron skillet with butter. Set aside.
In a large bowl, add pancake mix, buttermilk, vanilla, and orange zest. Stir until just combined, then fold in the cranberries.
Pour the mix into the prepared dish and bake for 30-35 minutes or until the top is golden brown.
